CONDENAÇÕES NÃO PATOLÓGICAS DE CARCAÇAS DE AVES NO PARÁ SEGUNDO O SERVIÇO DE INSPEÇÃO ESTADUAL (SIE) E FEDERAL (SIF) EM 2019
As estratégias indevidas de embarque, desembarque e transporte, em conjunto com as instalações inadaptadas e a submissão de animais sob condições de estresse e mal-estar são importantes agravos que podem desenvolver lesões e padrões inferiores na qualidade da carne, podendo desencadear desta forma condenações não patológicas e déficit na comercialização deste produto. Este trabalho tem por escopo descrever as principais causas de condenações não patológicas de aves no Pará, segundo o Serviço de Inspeção Federal - SIF e Serviço de Inspeção Estadual - SIE, em 2019. A pesquisa foi realizada utilizando relatórios oficiais de inspeção sanitária fornecidos pelo Serviço de Inspeção Federal do Ministério da Agricultura, Pecuária e Abastecimento (MAPA) e pela Agência de Defesa Agropecuária do Estado do Pará (ADEPARÁ) acerca das condenações não patológicas de aves no Pará em 2019. Considerando o SIF, 56,55% (2.355.122/ 4.164.753) dos casos foram de condenações não patológicas, com valores mais expressivas para contusão 66,14% (1.557.617/2.355.122). Enquanto no SIE, o número de condenações atingiu 134.492 carcaças, com destaque para caquexia com 33,00% (30.222/91.579). Conclui-se que, em 2019 o estado do Pará apresentou prevalência de condenações não patológicas de carcaças de aves de corte por contusão e caquexia.

The improper strategies of embarkation, disembarkation and transport, together with the unsuitable facilities and the submission of animals under conditions of stress and malaise are important problems that can develop lesions and inferior standards in the quality of the meat, thus triggering convictions non-pathological and deficit in the commercialization of this product. This work aims to describe the main causes of non-pathological bird convictions in Pará, according to the Federal Inspection Service - SIF and State Inspection Service - SIE, in 2019. The research was carried out using official reports of sanitary inspection provided by the Service of Inspection. Federal Inspection by the Ministry of Agriculture, Livestock and Supply (MAPA) and by the Agricultural Defense Agency of the State of Pará (ADEPARÁ) about the non-pathological convictions of birds in Pará in 2019. Considering the SIF, 56.55% (2,355,122 / 4,164,753) of the cases were non-pathological convictions, with more expressive values for contusion 66.14% (1,557,617 / 2,355,122). While in the SIE, the number of convictions reached 134,492 carcasses, with cachexia standing out with 33.00% (30,222 / 91,579). It is concluded that, in 2019, the state of Pará presented a prevalence of non-pathological condemnations of broiler carcasses by contusion and cachexia.
