Abstract: The Peruvian Andes have great diversity in terms of native potato varieties, with more than 4,000 varieties known. All of them have typical texture characteristics after cooking, with starches being the directors responsible for these characteristics. The objective of this research was to extract and characterize morphological properties such as size and shape, considering that the size and shape of starch granules depend on cultivation practices and altitudes. The determination was carried out using Scanning Electron Microscopy model Prisma E SEM (Termo Fisher Scientific), with a resolution of 5 nm in high vacuum mode. It was found that the size of the starch granules of sweet and bitter potatoes from the Andean region of Peru differ notably from one variety to another, in addition to the sizes presenting a normal distribution. Regarding shape, they are similar, presenting mostly elliptical and oval shapes.
