CARACTERÍSTICAS FÍSICO-QUÍMICAS DO MEL DA PRODUÇÃO APÍCOLA NAS ILHAS DO RIO PARANÁ EM GUAÍRA-PR
O estudo teve por objetivo realizar análises físico-químicas do mel considerando os teores da umidade, pH, hidroximetifurfural (HMF), acidez, diástase, açúcares e sacarose. O intuito de comparar os resultados obtidos nas análises físico-químicas do mel segue os padrões estabelecidos para o mel de Apis mellifera, em conformidade com as exigências das agências reguladoras nacionais ou internacionais, para a verificação da qualidade do mel produzido. As análises físico-químicas compreenderam entre os indicadores de maturidade do mel: umidade, pH, acidez e HMF. A pesquisa deu-se por meio de coleta de dados, com levantamento de informações para avaliar os principais produtores de mel das Ilhas do Rio Paraná, com delimitação compreendendo a população da Ponte Ayrton Senna da Silva até o vilarejo de Porto Morumbi- MS. Foi analisado o volume de maior produção de mel, tendo como amostra 6 apicultores, onde foram observadas suas coordenadas identificando os pontos obtidos através do aparelho GPS. As análises físico-químicas referentes às médias mínimo, máximo e médio, mostraram que a umidade encontrava-se com mínimo de 18:95; máximo 23:70 e médio 21:60, os quais segundo a Normativa nº 11 de 2000, estavam acima do permitido.

Abstract:
The objective of this study was to perform physicochemical analyzes of honey considering the moisture content, pH, hydroximetifurfural (HMF), acidity, diastasis, sugars and sucrose. The objective of comparing the results obtained in the physico-chemical analyzes of honey follows the established standards for honey of Apis mellifera, in accordance with the requirements of the national or international regulatory agencies, to verify the quality of honey produced. The physical-chemical analyzes included among the maturity indicators of honey: moisture, pH, acidity and HMF. The research was done through data collection with a survey of information to evaluate the main honey producers of the Paraná River Islands with delimitation comprising the population of the Ayrton Senna da Silva bridge to the village called Porto Morumbi, MS. The volume of higher honey production was analyzed, having as sample 06 beekeepers, where their coordinates were observed identifying the points obtained through the GPS device. The physicochemical analyzes of the minimum, maximum and average averages showed that the humidity is at least 18:95; Maximum 23:70 and average 21:60, which according to the norms nº 11 of 2000, are above the allowed.
