Abstract: Brazil presents a diversity of native fruits from various Brazilian biomes, with particular emphasis on Mauritia flexuosa (buriti), a palm tree found in swampy areas and widely distributed across South America. The pulp is the most used part of buriti fruit, containing a high content of lipids, proteins, carbohydrates, fibers, minerals, and vitamins. In addition, it is an important source of bioactive compounds, which exhibit antioxidant, prebiotic, antimicrobial, and antidiabetic properties. This chapter outlines the composition, nutritional properties, health benefits, and its potential for innovation. Due to its characteristics, buriti has significant applications in the food and pharmaceutical industries, in the agricultural sector, and in packaging production.
