Abstract: Currently, society is seeking healthier natural products that do not harm the environment. In this context, biosurfactants, molecules produced by microorganisms, have emerged as promising alternatives to chemical surfactants. These compounds have low toxicity and high biodegradability, and exhibit stability under extreme conditions of salinity, pH, and temperature. This review is a bibliographic compilation aimed at describing the properties, structural characteristics, microbial sources, main factors influencing production, and areas of biosurfactant use. The versatility of these molecules can be attributed to their application in various sectors, from environmental applications such as bioremediation to health-related uses in the pharmaceutical and cosmetic industries, as well as in the agricultural and food sectors. Biosurfactants are promising biomolecules that are gaining interest in the global market.
