AVALIAÇÃO TERMOGRÁFICA NA ESTIMATIMATIVA DE CARNE PSE EM SUÍNOS
O consumo de carne suína cresce expressivamente, no entanto alguns problemas podem acometer a qualidade da carne no período após o abate, pode-se citar como mais comum o aparecimento de carne PSE (pálida, mole e exsudativa). Por esta razão, objetivou-se com o presente trabalho avaliar os benefícios da termografia na identificação de carne PSE em suínos. A termografia é capaz de identificar oscilações de temperatura na superfície corporal dos animais. Estudos realizados apontaram que animais que apresentaram temperatura corporal antes e após o transporte em torno de 36,2° e 37,2ºC apresentaram maiores porcentagens de carne PSE. Sendo assim, as medidas termográficas são eficazes para auxiliar na pré identificação de animais susceptíveis a apresentarem carnes PSE após o abate.

Abstract:
The consumption of pork grows significantly, however some problems can affect the quality of the meat in the period after slaughter, the appearance of PSE (pale, soft and exudative) meat can be cited as the most common. For this reason, the objective of the present work was to evaluate the benefits of thermography in the identification of PSE meat in swine. Thermography is able to identify temperature fluctuations on the body surface of animals. Studies have shown that animals that presented body temperature before and after transport around 36.2° and 37.2°C had higher percentages of PSE meat. Therefore, thermographic measurements are effective to assist in the pre-identification of animals susceptible to presenting PSE meat after slaughter.
