Abstract: Microbiology is the science that studies microorganisms, an area of great importance for medicine and human health. In hospitals, food safety is crucial, as vulnerable patients can be affected by microorganisms present in food. The Nutrition and Dietetics Center (CND) plays a vital role in preventing this type of contamination. In this sense, the objective of this study was to evaluate the hygienic and sanitary conditions of the CND of a Small Hospital in the state of Pernambuco, considering federal standards and focusing on microbiological aspects, using an observational approach. Of the 97 items evaluated, 42.26% were in accordance with health standards, 35.05% did not correspond to the required standards and 22.68% did not apply to the reality of a Small Hospital. With this, it is concluded that the CND in question achieved a median index in most of the items evaluated, with the need to correct any irregularities present. It is also necessary to hire more employees so that microbiological control can be more effective at the CND. Lack of organization and inadequate food storage can result in several problems for the establishment, such as: cross-contamination, difficulty in finding products and rapid deterioration of food.
