Abstract: Edible ice creams are foods known as popsicles and ice creams. This study evaluated the physical and hygienic-sanitary conditions of ice cream shops in Palmas - Tocantins. Through the Municipal Health Surveillance, visits were made to the establishments and the Inspection Form, RDC 267 of ANVISA, was applied. The evaluated blocks presented degrees of conformity of: 42.36% (building and facilities); 38.66% (equipment, furniture and utensils); 51.79% (handlers); 47.57% (processing of edible ice creams) and 19.67% (documentation and records), values considered very unsatisfactory, representing a potential risk of contamination of the products prepared. The need to implement Good Manufacturing Practices (GMP) and the Hazard Analysis and Critical Control Points System (HACCP) became evident, aiming to raise the hygienic-sanitary level of ice cream shops, protecting the health of consumers.
