Abstract: Childhood is the time when children are in full development and growth. It is at this stage of life that eating habits begin to be built and access to healthy food during this period is essential. School plays a fundamental role in children's learning, development and nutrition. Therefore, the objective of this study was to evaluate the influence of nutritional education on the food acceptability rates of carrots and beets by preschoolers. The study included 68 children aged 4 to 5 years from two CEMEIs in the city of Passos, Minas Gerais, one located in the center (CEMEI A) and the other in the outskirts (CEMEI B). The study was carried out in three stages, namely: (i) application of the carrot and beet acceptability test, with a facial hedonic scale; (ii) implementation of the nutritional intervention using the nutritional traffic light method, associating the color green with healthy foods that should be eaten every day, yellow with foods whose consumption should be controlled, and red with foods that are harmful to health and should therefore be avoided; (iii) repetition of the acceptability test for carrots and beets, in order to assess whether nutritional education interfered with the results of student acceptance. At the end of the study, a percentage increase in acceptability rates was observed in both CEMEIs after nutritional education, mainly for beets. The results demonstrated the importance of nutritional education in schools, in addition to its influence on children's acceptance of the food.
