Abstract: A range of industrially produced enzymes are used in the production, conservation and modification of animal and vegetable products, such as in the production of food, medicines and in the production of derivatives of animal and vegetable raw materials, such as bioactives. These bioactive compounds are also widely used in industry, contemplating the possibility of application in products such as milk, various beverages, meats and also bakery and can be extracted through the application of enzymes. There are some factors that can affect enzymatic activity, such as temperature, pH and substrate concentration. In this sense, each enzymatic technique for obtaining bioactive compounds has a methodology. The use of enzymes to obtain bioactive compounds has been highlighted, which requires further studies to finally establish itself commercially. On the other hand, the enzymatic process presents some bottlenecks that require studies and planning, since it is a high cost process, since the production and purification of the enzymes to be applied is necessary and its conditions must be well delimited, since enzymes are highly sensitive and act in a specific temperature and pH range.
