APLICAÇÃO DA TEORIA DAS RESTRIÇÕES EM UMA INDÚSTRIA ALIMENTICIA
A teoria das restrições foi criada,
na década de 1980, como forma de alavancar
os ganhos operacionais de uma organização,
propondo cinco passos para sua realização. O
presente estudo visa aplicar os cinco passos em
um frigorífico, mais espeecificamente, na linha
de produção de peças de traseiros bovinos,
objetivando obter aumento de produtividade
sem a necessidade de contratação de mão
de obra e/ou compra de maquinário, isso
sendo feito identificando o recurso gargalo,
o mantendo sempre com peças a processar,
ditando o ritmo das outras operações e tendo
sua capacidade aumentada. Os procedimentos
metodológicos utilizados para alcançar os
objetivos caracterizam a pesquisa-ação,
sendo necessária a modificação do modo
de produção, simultaneamente à produção
científica. A relevância do artigo se reflete na
geração de conhecimento prático, o que permite
aos pesquisadores verificar sua aplicação.
O resultado final foi um aumento de 25% da
produção de peças/hora na produção de carne
bovina.

Abstract:
The theory of constraints was
created, in the 1980s, as a way of leveraging the
operational gains of an organization, proposing
five steps to its realization. The present study
aims to apply the five steps in a frigorific, more
specifically, in the production line of bovine
rear parts, in order to obtain an increase of
productivity without the need of hiring of labor
and / or purchase of machinery, this being done
identifying the bottleneck feature, keeping it
always with pieces to process, dictating the pace
of other operations and having their capacity
increased. The methodological procedures used
to achieve the objectives characterize the action
research, being necessary the modification
of the mode of production, simultaneously to
the scientific production. The relevance of the
article is reflected in the generation of practical
knowledge, which allows researchers to verify
its application. The final result was a 25%
increase in the production of parts / hour in the
production of beef.
