Abstract: This document aimed to research the application of the Systematic Literature Review (RSL) in gas chromatography (GC) and its detectors, in the food area. The general search included more than 10 thousand articles on the topic, in this sense, the search was restricted to the Brazilian magazines Química Nova and Journal Brazilian Chemical Society with a total of 130 articles. These magazines have publications in Portuguese and/or English and free access to documents. Based on the inclusion and exclusion criteria of this research, 26 articles were obtained for analysis and categorization. In the results, five categories were created: agrochemical residues, volatile compounds, fixed chemical constituents, toxins/contaminants and by-products. When analyzing the work in each category, the authors' concern with food safety was observed, in addition to identifying the chemical compounds present in these foods (fruit, milk, bread, processed foods, etc.), checking contaminants and by-products. The authors reinforced gas chromatography as an important analysis technique, especially the mass spectrometry detector, which was the most used in the selected articles, being effective both in identifying compounds and in quantifying them using validated methods. This research was qualitative in nature and its purpose was to allow greater understanding and contextualization of gas chromatography for food applications, using RSL.
