Abstract: Chickpea (Cicer arietinum L.) is the fifth most cultivated legume in the world. It presents a good source of proteins, carbohydrates, minerals, vitamins and fiber. This legume has great potential to be explored in order to minimize protein and mineral deficiencies in the population, since it is a grain that is a good source of these nutrients. Whole wheat flour has nutritional improvements compared to wheat flour, as it is milled from the whole grain, with great fiber potential to be explored. This study presents physical-chemical data such as water, ash, proteins, lipids, crude fiber and carbohydrate content, both of chickpeas and cookies made with chickpea flour and whole wheat flour, as well as such as physical and sensorial analyzes of this product. The cookies were made by mixing chickpea flour with whole wheat flour in proportions of 0%, 15%, 30%, 45% and 50% and other ingredients. Chickpea flour had high levels of protein (25.90 db), lipids (11.49 db) and fiber (39.79 db). The cookies showed an increase in protein values, providing better protein quality compared to cookies made with whole wheat flour. The results indicated that the addition of up to 50% of chickpea flour in the formulations, replacing whole wheat flour, did not influence the main physical characteristics of the cookies. The results of the sensory analyzes showed that it is viable to use up to 40% of chickpea flour in the preparation of cookies, as it provides satisfactory sensory scores and good purchase intention for the majority of formulations tested.
