Abstract: Milk is the most consumed food in the world, as it is a source of nutrients, it is of paramount importance in all stages of life, focusing more on children and the elderly. But for the milk to be suitable for human consumption, it needs to go through rigorous quality control processes and sanitary steps, which aim to be careful with the detection of adulterants. Based on the above, the objective of this research is to show that the pharmacist is able to act in the quality control of the food industry and to analyze the presence of adulterating substances present in fresh milk, sold informally in the northern region of Rio Grande do Sul. South. To track the presence of adulterants in fresh milk, analyzes of pH and the presence of hydrogen peroxide, formaldehyde, chlorine, hypochlorite, starch, chloride, urine and sodium hydroxide were carried out, all analyzes performed in triplicate. The results found show that all analyzes showed a negative result for the presence of adulterants and made it possible to observe the fragility of the qualitative analyzes employed. With this research it was possible to conclude that the samples showed negative results among the adulterants researched and that the pharmacist is able to work in quality control in a food industry, always seeking training and improvements so that analytical errors do not happen frequently and that the inspection acts in such a way as to be able to preserve the health of the consumer.
