ALIMENTAÇÃO ESCOLAR OFERECIDA AOS ALUNOS DO ENSINO FUNDAMENTAL DE UMA ESCOLA MUNICIPAL DO ESTADO DO CEARÁ: AVALIAÇÃO DE MICRONUTRIENTES
Introdução: O Programa Nacional
de Alimentação Escolar (PNAE) é uma política
direcionada para escolas públicas tendo como
objetivo atender as necessidades nutricionais
dos alunos enquanto estiverem no ambiente
escolar. O presente estudo tem como objetivo
avaliar a qualidade da alimentação oferecida
aos alunos do ensino fundamental de uma
escola municipal do estado do Ceará e se elas
atendem os parâmetros do Programa Nacional
de Alimentação Escolar. Materiais e Métodos:
Durante 10 dias consecutivos, do mês de maio
de 2015, foram coletados dados da merenda
escolar que foi ofertada para os alunos da
escola de Ensino Fundamental localizada no
Ceará, e feita a comparação com os parâmetros
do PNAE para verificar se a merenda ofertada
estava dentro do recomendado pelo programa.
Resultados: Foi observado que em todos
os dias as necessidades de micronutientes
não foram atingidas, além disso a escola não
seguia o cardápio montado pela nutricionista da
prefeitura, além de não contemplar nenhuma
atividade voltada para a educação nutricional.
Conclusão: A meta de fornecer 20% das
necessidades nutricionais dos alunos do
ensino fundamental na alimentação escolar,
no ano de 2015, não foi atingida, pois todas
as adequações nutricionais ficaram fora da
faixa recomendada. Assim, constatamos que
nenhum parâmetro preconizado pelo Programa
Nacional de Alimentação Escolar foi atendido.

Abstract:
Introduction: The National
School Feeding Program (NSFP) is a policy
directed at public schools aimed at meeting the
nutritional needs of students while in the school.
The present study aims to evaluate the quality
of food offered to elementary school students
of a municipal school in the state of Ceará
and whether they meet the parameters of the
National School Feeding Program. Materials
and Methods: During 10 consecutive days of
the month of May 2015, data were collected
from the school lunch that was offered to the
students of the Elementary School located in
Ceará, and compared with the parameters of
the NSFP to verify if the offered was within the
recommendation of the program. Results: It
was observed that micronutrient needs were
not reached in any day. In addition, the school
did not follow the menu set up by the city’s
nutritionist, besides not contemplating any activity focused on nutritional education.
Conclusion: The goal of providing 20% of the nutritional needs of elementary school
students in school meals in 2015 was not met because all nutritional adjustments were
out of the recommended range. Thus, we verified that no parameter recommended by
the National School Feeding Program was met.
