ALIMENTAÇÃO E HOSPITALIDADE NO RIO GRANDE DO SUL OITOCENTISTA A APARTIR DE NARRATIVAS DE VIAGENS
Neste texto buscou-se compreender as representações sobre as práticas alimentares e as demonstrações de hospitalidade dos habitantes da Província do Rio Grande do Sul formuladas por quatro viajantes europeus, dois franceses e dois alemães, a saber, Nicolau Dreys, Auguste de Saint-Hilaire, Carl Seidler e Robert Avé-Lallemant, que percorreram diferentes regiões desta província, no período que se estende de 1817 a 1858. De Auguste de Saint-Hilaire, analisaremos a obra “Viagem ao Rio Grande do Sul”, publicada pela editora Itatiaia/Edusp, em 1999; de Nicolau Dreys, “Notícia descritiva da Província do Rio Grande de São Pedro do Sul”, publicada pela editora Nova Dimensão/EDIPUCRS, em 1990; de Carl Seidler, “Dez anos no Brasil”, publicada pela editora Itatiaia/Edusp, em 1980, e de Robert Avé-Lallemant, a obra “Viagem pela província do Rio Grande do Sul”, publicada pela editoria Itatiaia/Edusp, em 1980. Para analisá-las, recorrermos à metodologia da Análise Textual Discursiva, proposta por Roque Moraes e Maria do Carmo Galiazzi, que propõem, a partir de leituras detalhadas do corpus textual, a fragmentação dos elementos relacionados com o objeto de estudo, para, na sequência, proceder à reconstrução dos fragmentos textuais, estabelecendo as relações com base em critérios de semelhança e diferença, favorecendo, desta forma, uma visão renovada e um novo entendimento dos fenômenos e discursos investigados. A análise dos relatos produzidos por estes viajantes permitiu identificar e discutir as formas de bem receber por eles registradas e a relação estabelecida entre a oferta de determinados alimentos e a hospitalidade, bem como o processo de construção de representações sobre o comer e o bem receber no Rio Grande do Sul oitocentista.

Abstract:
In this paper, we sought to understand the representations of eating practices and the demonstrations of hospitality of the inhabitants of the Province of Rio Grande do Sul formulated by four European travelers, two French and two Germans, namely, Nicolau Dreys, Auguste de Saint-Hilaire, Carl Seidler and Robert Avé-Lallemant, who traveled through different regions of this province, from 1817 to 1858. From Auguste de Saint-Hilaire, we will analyze the work “Viagem ao Rio Grande do Sul”, published by the publisher Itatiaia / Edusp , in 1999; Nicolau Dreys, “Descriptive news from the Province of Rio Grande de São Pedro do Sul”, published by Nova Dimensão / EDIPUCRS, in 1990; by Carl Seidler, “Ten years in Brazil”, published by the publisher Itatiaia / Edusp, in 1980, and by Robert Avé-Lallemant, the work “Journey through the province of Rio Grande do Sul”, published by the editorial office Itatiaia / Edusp, in 1980 To analyze them, we use the methodology of Discursive Textual Analysis, proposed by Roque Moraes and Maria do Carmo Galiazzi, who propose, from detailed readings of the textual corpus, the fragmentation of the elements related to the object of study, for, in the sequence, proceed to the reconstruction of the textual fragments, establishing the relations based on criteria of similarity and difference, favoring, in this way, a renewed vision and a new understanding of the investigated phenomena and discourses. The analysis of the reports produced by these travelers allowed to identify and discuss the forms of hospitality registered by them and the relationship established between the offer of certain foods and hospitality, as well as the process of building representations about eating and welcoming in the 19th century Rio Grande do Sul.
