Abstract: Lettuce (Lactuca sativa L.) is one of the most consumed vegetables in Brazil, standing out in both production and consumption. This study aimed to evaluate the growth and development of lettuce cultivars under different doses of organic fertilization and cropping systems, in open field and protected environment, in Southern Piauí. The experiment was carried out at the Horticulture Sector of the Professora Cinobelina Elvas Campus of the Federal University of Piauí, in Bom Jesus-PI, using three representative cultivars: crisphead, looseleaf and butterhead. The experimental design was randomized blocks, in a split-split plot scheme, with five doses of cattle manure (0, 20, 40, 60 and 80 t ha⁻¹), two cultivation environments (50% shading screenhouse and open field) and three replications. At 41 days after transplanting, morphological and physiological parameters were evaluated, such as plant height, leaf number, head circumference and stem length, fresh head mass, leaf area and chlorophyll index. It was concluded that the cultivation environment significantly influences lettuce growth and development, with the use of a 50% shading screenhouse improving product quality. On the other hand, in soils with intermediate organic matter content, cattle manure application showed no significant effects on the performance of the cultivars.
