A DOCE SOCIEDADE PERNAMBUCANA – UMA RÁPIDA ANÁLISE DO LIVRO AÇÚCAR DE GILBERTO FREYRE
A descoberta e apropriação do fogo e o desenvolvimento da agricultura
desenvolveram o homem e o tornaram capaz de constituir uma sociedade e evoluir
com ela, com suas crenças, com seus ritos, com seus costumes e saberes. A
monocultura da cana-de-açúcar teve o mesmo papel no nordeste brasileiro,
especificamente em Pernambuco. Ela foi responsável por sedentarizar o homem
pernambucano e ensiná-lo a ser, a existir, a se relacionar, a se alimentar e a se
comunicar. Em “Açúcar”, Freyre (2007) trás sua visão sobre as mais fortes e
arraigadas influências da monocultura da cana e da produção e utilização do açúcar
na construção sociocultural e gastronômica de Pernambuco, elucidando fatos e
acontecimentos que dão força a sua afirmação: “Sem açúcar não se compreende o
homem do Nordeste”.

Abstract:
The discovery and appropriation of fire and the development of
agriculture developed man and made him capable of forming a society and evolving
with it, its beliefs, its rites, its customs and knowledge. The sugar cane monoculture
had the same role in the Brazilian northeast, specifically in Pernambuco. She was
responsible for sedentarizing the Pernambuco man and teaching him to be, to exist,
to relate, to feed and to communicate. In "Açúcar", Freyre (2007) brings his vision of
the strongest and most deeply rooted influences of sugarcane monoculture and the
production and use of sugar in the socio-cultural and gastronomic construction of
Pernambuco, elucidating facts and events that give strength to his statement:
“Without sugar you can not understand the man from the Northeast”.
