Abstract: Based on this research, we analyzed the production of brandy from sugar cane during Portuguese America in the 18th century. The source studied was a memoir written by a Brazilian Portuguese named João Manso Pereira (1750?-1820), entitled “Memoria sobre a Reforma dos Alembiques ou de hum Proprio para a Distillação das Águas Ardentes (1797)”. In the 1700s, with the strong influence of the Enlightenment and natural philosophy, the work was published by Casa Literária Arco do Cego, which already had experience working on arts, agriculture, manufacturing, medicine, nautical work in Portugal and its possessions. In Memoria, the chemist brings illustrations of the still, in an attempt to improve the production of brandy through translations of foreign works, and also discusses the ways in which the Portuguese-Brazilian population used cachaça.
