Abstract:
In the fruit and vegetable belt of La Plata, approximately 42,000 tons of food losses are generated every year, which could improve the nutritional conditions of an important sector of the region's inhabitants. Although the recovery of this food is complex due to a multiplicity of factors, among them, the logistical management of the rescue, and the useful life of the food to be delivered, a substantial factor to consider given the probable loss of properties and nutrients, it is has been able to advance in the installation of a vegetable medallion production plant on the property of the La Plata Food Bank. This work demonstrates how, based on the recovery of part of the aforementioned food losses and after a tight analysis of the technical and economic feasibility of its production, it has been possible to install a production plant for 124 soup kitchens. the city of La Plata. The proposed business model has allowed us to provide economic sustainability and the possibility of scaling production.
