Abstract: Industrial refrigeration is one of the main resources used to ensure the preservation and safety of perishable foods, playing a crucial role in maintaining quality during storage and transportation. Among the most widely employed technologies in this sector is the use of spiral freezing tunnels (Girofreezers), which enable rapid, uniform, and continuous freezing. This study aims to design a centralized refrigeration system (rack) for the continuous freezing of cheese bread, considering a production rate of 1,100 kg/h. The methodology was based on the application of thermodynamics, heat transfer, and thermal load analysis concepts, also accounting for insulation losses, drive systems, and air infiltration. Based on the estimated total thermal load, the main components of the system were selected to ensure appropriate operational performance and energy efficiency. It is important to note that the proposed system was not physically implemented, as the project was developed theoretically. The analysis of the results was conducted through calculations and comparisons with data from the literature and related studies. These comparisons confirmed the technical feasibility of the proposed solution and highlighted its applicability in high-productivity industrial processes.
