Abstract: Introduction: Non-celiac gluten sensitivity (SGNC) is a condition characterized by gastrointestinal and extraintestinal symptoms without evidence of celiac disease or wheat allergy. Food plays a central role both in the manifestation and management of symptoms. Objectives: Due to not having a specific diagnosis in the SGNC, this study aims to gather current information on diagnostic methods, in order to contribute to clinical management. Methodology: A literature review will be carried out in the SciELO and PubMed databases, in the period 2019 and 2025, using the descriptors: non-celiac gluten; LOW FODMAPs diet and wheat allergy. Expected results: It is expected to obtain as a response the definition of forms of diagnosis based on the available evidence, in order to bring benefits both to the population, by favoring the clinical management of CNGS, and to health professionals, by enabling a better understanding of which food components are associated with symptoms and which dietary strategies are more effective. This approach is essential to guide evidence-based conduct.
