El análisis se realizó en la Universidad Tecnológica de Tula – Tepeji en coordinación con el Cuerpo Académico de Modelos Administrativos Contables y Fiscales (MACOFI), en donde se logró obtener tortilla fortificada con harina de mezquite, pero no se cuenta con un estudio organoléptico que nos aporte el grado de aceptación tendrá por parte de los consumidores. Así mismo se desconoce su estado financiero. El estudio presenta 2 etapas: I) Estudio Organoléptico en donde se utilizó un cuestionario cerrado a escala Likert, dirigida a una muestra representativa de la población y se empleó el Método Delphi por medio de un cuestionario abierto, aplicado a un grupo de expertos y II) Estudio financiero que apoyado del proceso de elaboración de la harina y tortilla se obtuvieron los datos para la integración de los costos, gastos tanto fijos y variables con datos de enero – marzo 2024.

  • Abstract: The analysis was carried out at the Technological University of Tula - Tepeji in coordination with the Academic Body of Administrative Accounting and Fiscal Models (MACOFI), where it was possible to obtain tortilla fortified with mesquite flour, but there is no organoleptic study that contribute the degree of acceptance it will have on the part of consumers. Likewise, his financial status is unknown. The study presents 2 stages: I) Organoleptic Study where a closed questionnaire on a Likert scale was used, aimed at a representative sample of the population and the Delphi Method was used through an open questionnaire, applied to a group of experts and II ) Financial study that supported the flour and tortilla production process, data was obtained for the integration of costs, both fixed and variable expenses with data from January - March 2024.
