Abstract: The analysis was carried out at the Technological University of Tula - Tepeji in coordination with the Academic Body of Administrative Accounting and Fiscal Models (MACOFI), where it was possible to obtain tortilla fortified with mesquite flour, but there is no organoleptic study that contribute the degree of acceptance it will have on the part of consumers. Likewise, his financial status is unknown. The study presents 2 stages: I) Organoleptic Study where a closed questionnaire on a Likert scale was used, aimed at a representative sample of the population and the Delphi Method was used through an open questionnaire, applied to a group of experts and II ) Financial study that supported the flour and tortilla production process, data was obtained for the integration of costs, both fixed and variable expenses with data from January - March 2024.
