FINANCIAL AND ORGANOLEPTIC ANALYSIS OF THE PROJECT: TORTILLA-TYPE PRODUCT WITH HIGH PROTEIN CONTENT TO IMPROVE THE HEALTH OF THE POPULATION AND CONTRIBUTE TO THE ACHIEVEMENT OF ODS 1, 2 AND 3
The analysis was carried out at the Technological University of Tula - Tepeji in coordination with the Academic Body of Administrative Accounting and Fiscal Models (MACOFI), where it was possible to obtain tortillas fortified with mesquite flour, but there is no organoleptic study to provide us with the degree of acceptance by consumers. Its financial status is also unknown. The study presents 2 stages: I) Organoleptic study where a closed Likert scale questionnaire was used, directed to a representative sample of the population and the Delphi Method was used by means of an open questionnaire, applied to a group of experts and II) Financial study that supported by the flour and tortilla elaboration process, data was obtained for the integration of costs, fixed and variable expenses with data from January - March 2024.
